Conservarea carnii
Industria alimentara a descoperit si foloseste de foarte mult timp metode de consenvare a carnii. Noi nu le vom descriem pe toate.
Cea mai veche metoda de conservare a carnii este uscarea. Uscarea carnii trebuie aplicata doar in anumite limite, caci uscarea totala duce la deshidratarea exagerata a celulelor, la asemenea modificari in carne incit ea devine necomestibila. Prin uscarea exagerata a carnii se distrug celulele, acestea piezindu-si capacitatea de absortie si legare a apei.
O alta metoda este congelarea. Macelariile desfac adesea carne congelata prin metode de congelare rapida, industriala.
Decongelarea este o operatie care cere o mare grija, deoarece o procedura incorecta poate sa distruga produsul. Decongelarea se face la o temperatura cit mai apropiata de 0oC, chiar daca aceasta necesita un timp mai indelungat. Daca decongelam carnea la o temperatura mai ridicata (15-20 gr C) trebuie sa ferim carnea de curentii de aer, pentru a evita factorii care favorizeaza evaporarea. In caz ca decongelarea se face in apa, temperatura acesteia sa nu depaseasca 15 grade C.
